- Promotes the Pullman brand philosophy
- Organizes and supervises food preparation in line with the occupancy and consumption forecasts
- Adapts to any specific requests made by guests
- Keeps close track of what the competition is doing
- Devises Policies and Procedures for Kitchen
- Ensures that all standard recipes are followed and training
- Manages headcount for optimum performance in the department
- Respects the productivity ratios as budgeted
- Reports to General Manager
